Enchilada Casserole

I'm just going to link to an amazing recipe I found. I made it for the first time with my friends over, and they all gave me the thumbs up and said it was amazing. So here goes:

And you definitely need to try the homemade enchilada sauce with the above recipe. It's amazing and quite simple.

I'll have to put up a picture sometime... But let me just say, don't skip the avocado on top. It adds an extra layer of goodness (and healthiness) to the dish.

Ingredients needed:
Enchilada sauce,
corn tortillas
1 can of black beans
1 can or similar amount of corn
1 bag shredded cheese
1 avocado
1 1/2 pounds shredded chicken
seasonings: I used oregano, garlic, minced onion and cilantro on top
*sour cream on the side optional. My friends all added sour cream to theirs.

It's quite simple: spread some sauce on the bottom of your baking dish, then a layer of corn tortillas (cut in halves or quarters). Then layer in your chicken, beans, corn, and cheese. Do this 2-3 times, so you have the layer of cheese on top. Cook at 350 for 15-20 minutes, covered. Uncover and let cook for 5 more minutes. Cut the avocado in chunks and spread across the casserole, and you are ready to dish up!
