Tomato Squash Layered Casserole

3 c squash, sliced thin 
1 can diced tomatoes with garlic and oregano
2 tsp garlic powder
1 tsp Italian seasoning
1/2 c shredded Parmesan cheese
1 1/2 c shredded mozzarella
1 c panko Italian bread crumbs
2 Tbsp butter
French fried onion pieces

(Optional: add hamburger or Italian sausage to make a one dish casserole)

Preheat oven to 375. Grease 9 x 13 baking dish. Layer sliced squash in a single layer on the bottom of baking dish. Sprinkle with 1/2 of the mozzarella. Mixed together, Italian seasoning and garlic. Sprinkle half over the cheese. Spread out tomatoes over squash. Cover with another layer of the sliced squash. Place the rest of the cheese on top of the squash. Sprinkle rest of seasoning on top of cheese. Mix together butter and breadcrumbs. Sprinkle on top of dish. Sprinkle French fried onions on top. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 20 minutes. Lets stand for five minutes before cutting.
