Snickerdoodle Coffee Cake

1 c flour  
1 c sugar
1 tsp baking powder
1 Tbsp cinnamon
1/2 c milk
1/4 c melted butter
1 egg

Mix all ingredients together. Pour into a greased 9-inch square pan. Bake at 400 for 20-25 minutes.

Optional:  glaze after baking:  Mix 1 1/2 c powdered sugar, 2 Tbsp butter, 1 Tbsp milk and spread on top.

Vanilla Crepes

1 1/2 cups milk
3 egg yolks
2 tablespoons vanilla extract
1 1/2 cups all-purpose flour
2 tablespoons sugar
1/2 teaspoon salt
5 tablespoons melted butter


In a large bowl, mix together the milk, egg yolks and vanilla. Stir in the flour, sugar, salt and melted butter until well blended. Heat a frying pan over medium heat until hot. Coat with light coating of oil. Pour 1/8 cup of batter into center of the pan and use the back of a spoon to spread the batter in a larger circle. When bubbles form on the top and the edges are dry, flip over and cook until lightly browned on the other side and edges are golden. Repeat with remaining batter.

Fill crepes with your favorite fruit, cream, caramel or even ice cream or cheese to serve.

Makes 15 7" crepes

Sausage Balls

1 lb ground pork sausage
1 3/4 c flour
2 Tbsp shortening
2 c cheddar cheese, grated

Mix together sausage, shortening and flour.  Add cheese and knead until combined. Form into 1" balls and place on parchment lined cookie sheet.  Bake at 350 for  10-15 minutes.

Texas Company Eggs

1/2 lb bacon, cooked
18 eggs
3/4 c milk
8 oz sour cream
1 1/2 c grated cheddar cheese

Whip eggs and milk. Scramble until they just hold their shape - soft and a little runny. Spread eggs in greased 9x13. While eggs are hot, spread with sour cream. Top with cheese then bacon. Cover. Refrigerate overnight. Bake at 350 uncovered for 20 min. or until hot.

Honey Wheat Sandwich Rolls

1 1/4 c warm milk
1 egg, beaten
2 Tbsp margarine
1/4 c honey
2 3/4 c bread flour
1 c whole wheat flour
3/4 tsp salt
1 1/4 tsp quick yeast

Place ingredients into the bread machine. Select dough cycle.

Let rise overnight. Roll out 3/4 inches thick. Cut out rolls with a 3 or 4 inch wide jar mouth. Place on lightly greased cookie sheet. Cover. Let rise until doubled - about 1 hour. Bake at 350 for 10 to 15 minutes.

Optional:  when finished baking, brush with 2 Tbsp melted margarine

Ruth's Favorite Chocolate Chip Cookies



  • 1/2 cup butter
  • 1/2 cup shortening
  • 3/4 cup packed brown sugar
  • 1/2 cup white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups semisweet chocolate chips
  • 2 cups all-purpose flour


  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Combine flour, baking soda and salt. In another bowl, combine soften butter with shortening, sugar and brown sugar and vanilla. Beat until creamy. Beat in egg. Gradually add flour mixture and mix well. Stir in chocolate chips.
  3. Bake on ungreased cookie sheet for 8-10 min. Note: I take them out of the oven before they start to turn dark! Do not double this recipe, or they don't bake soft. Can make this recipe for bars too. Spread dough into greased 9x13 inch pan. Bake them at 375 degrees F (190 degrees C) for 15-20 minutes.

Pepper Steak

1 can (  oz) spaghetti sauce
3 garlic cloves
1 c peppers, cut in strips
1 small onion, diced
3 Tbsp soy sauce
1/2 tsp ground ginger
1/2 tsp salt
1/4 tsp pepper

Day Before:
Cook venison (covered with italian salad dressing) in crock pot on low for 7 hours.  Drain, saving 1 cup of liquid from meat drippings/salad dressing in crock pot.
Day to Serve:
Place venison and reserved liquid in crock pot. Pour spaghetti sauce on top.  Add in peppers, onions, soy sauce, ginger, salt and pepper.  Stir to mix. Cook on low 4 hours.  (if you are cooking meat in crock pot overnight and the meat is still warm, then 2 - 4 hours on low is fine)

Nan's Hearty Chili Mac

2 lbs ground beef
1 med. onion, chopped
1 can (46 oz) tomato juice
1 can (28 oz) diced tomatoes, undrained
2 celery ribs without leaves, chopped
3 Tbsp brown sugar
2 Tbsp chili powder
1 tsp salt
1 tsp prepared mustard
1/4 tsp pepper
2 cans (16 oz) kidney beans
1 c uncooked elbow macaroni

Cook beef and onion over medium heat until meat is no longer pink. Drain.
Place cooked beef in a large pot, Stir in tomato juice, tomatoes, celery, brown sugar, chili powder, salt, mustard and pepper. Bring to a boil. Reduce heat and simmer, uncovered, for 1 hour - stirring occasionally.  Add kidney bean and macaroni. Simmer 15-20 minutes longer or until macaroni is tender.

Roasted Potatoes

2 lb potatoes, cut in chunks
1/3 cup oil
1 packet onion soup mix

Grease 9x13 baking dish.  Add potatoes.  Pour oil over potatoes and stir to coat.  Pour onion soup mix over potatoes.  Cover with foil.  Bake at 350 for 50-60 minutes. (optional: bake at 400 for 40 min)

Beef and Broccoli

2 Tbsp cornstarch
3 tsp sugar
10 Tbsp soy sauce
1/2 c coke
1 pound beef, pork or chicken, cooked
5 c broccoli florets, cooked
Hot cooked rice

Combine cornstarch, sugar, soy sauce and coke until smooth.  Add in meat and stir to coat.  Pour meat and sauce into skillet.  Add broccoli.  Heat until thick and bubbling.  Serve over rice.

Options:  Add carrots, water chestnuts, chopped onion or peppers

Honey Whole Wheat Bread

1 1/8 c warm water (110 degrees)

1/4 c honey
2 T melted margarine
1 tsp salt
1 1/2 c whole wheat flour
1 1/2 c bread flour
1 1/2 tsp yeast

Place ingredients in bread machine in the order listed and
Options:  Use the dough setting on bread machine.  Place dough in refrigerator overnight.

BBQ Meatballs

Meatballs
1 1/2 lb. ground beef
3/4 c rolled oats
1 c milk
3 tsp minced onions
1 1/2 tsp salt
1/2 tsp pepper

Mix all ingredients together.  Make into ball shapes.  Place on cookie sheet. Bake at 350 for 10 min.

BBQ Sauce
2 Tbsp sugar
2 Tbsp worchestershire sauce
1 c ketchup
1/2 c water
3 Tbsp vinegar
6 Tbsp chopped onion (optional)
Mix ingredients together.

To Complete:
Place meatballs in casserole dish. Pour sauce over meatballs. bake @350 for 30 min.
Serve over rice, mashed potatoes or make meatball subs.

Options:  May also be cooked in crock pot on low for 4-6 hours.

Mandarin Orange Salad

1/2 c sliced almonds
3 Tbsp sugar
1/2 head lettuce
1/2 head romaine lettuce
1 c chopped celery (optional)
2 green onions, chopped (optional)
11 oz can mandarin oranges, drained
1/2 tsp salt
dash pepper
1/4 c oil
1 Tbsp chopped parsley
2 Tbsp sugar
2 Tbsp vinegar
dash tabasco


Cook almonds and 3 Tbsp sugar in frying pan until sugar melts onto almonds.  Cool.  Set aside.
Mix salt, pepper, oil, parsley, 2 Tbsp sugar, vinegar and tabasco in small container.  Set aside.
Mix lettuces, celery, onion, and oranges in bowl.  Right before serving, mix in sugared almonds and pour salad dressing over lettuce.  Toss and serve.

Hint:  Sugared almonds and salad dressing may both be prepared ahead of time. Salad dressing seems to lose some of the sharp vinegar taste/smell if it is prepared earlier and allowed to breathe.

Rice Crispies

1/4 c margarine
5 c mini marshmallows
5 c rice crispies cereal
Place margarine in 9x13 baking dish. Melt in microwave on high 45-60 seconds.  Add marshmallows.  Microwave 1 minute on high then stir. Microwave 1/2 - 1 minute more until marshmallows are soft and melted. Stir until smooth. Add rice crispies cereal 1 cup at a time - stirring until well coated. Cool for half hour.

Lemon Bread

6 Tbsp margarine (at room temperature)
1 c sugar
2 eggs (at room temperature)
1 Tbsp lemon juice
1 1/2 c flour
1 tsp baking powder
1/4 tsp salt
1/2 c milk (at room temperature)

glaze:
1/2 c sugar
1/3 c lemon juice

Preheat over to 350. Grease and flour 9" loaf pan. Cream butter and sugar. Add eggs; beat well. Add lemon juice. Sift together dry ingredients. Add to butter mixture alternating with milk, beginning and ending with dry ingredients. Pour into pan. Bake 50-60 minutes until tester come out clean. (check at 35 minutes per Ruth)

Glaze:  Dissolve sugar in lemon juice. As soon as bread is done baking, spoon glaze over hot loaf. Cool 10 minutes. Remove from pan.

Turkey Puffs

2 c turkey, chopped
3/4 box cream cheese (softened)
2 Tbsp milk
4 Tbsp margarine (softened)
salt & pepper to taste
chopped onion to taste
2 cans crescent rolls

Separate rolls into 8 rectangles instead of triangles.  Put mixture into center of each rectangle. Bring corners to the middle. bake 20 minutes at 350 on ungreased cookie sheet.  can make 16 small puffs using the triangles.


Alternatives:
Add dried cranberries 
Make a sheet instead of individual puffs

Chicken in Foil


chicken pieces
onions, sliced
paprika, garlic powder, pepper
liquid: orange juice, milk or water (3 Tbsp per pound of chicken)
butter or margarine


Line 9x13 baking dish with foil.  Grease foil. Place chicken pieces on foil. Sprinkle with spices to taste.   Add in onion pieces. Pour choice of liquid over top of chicken. Dot chicken with butter.  Fold top of foil tightly around chicken. Bake at 425 for 1 hour.

Butterscotch Brownies

1/4 c. margarine/shortening
1 c.    light brown sugar (packed)
1        egg
3/4 c. flour
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. vanilla
1/2 c. chopped walnuts (optional)

Heat oven to 350. Melt butter and mix with sugar. Stir in egg. Stir flour, baking powder, and salt together; blend in. Add vanilla and walnuts. Spread in well-greased 8x8 pan. Bake 25 min. Do not overbake! Cut in bars while warm.

Muddy Buddies

1 c chocolate chips
1/2 c peanut butter
1/4 c margarine
1 1/2 c powdered sugar
9 c chex cereal

Put chocolate chips, peanut butter and margarine in medium bowl.  Microwave on high for 1 minute.  Stir til smooth. Place cereal in large bowl.  Pour chocolate mix over cereal and stir until cereal is evenly covered.  Sprinkle powdered sugar on top and stir in.

Frappuccino

1/3 c ground coffee
1 c water
2 1/2 c milk (for richer flavor use part 1/2 & 1/2 or 2% milk)
1/4 c sugar

Brew coffee using the cup of water.  Re-brew a second time to deepen coffee flavor. Stir in milk and sugar.  Optional:  use flavored coffee or add hot chocolate mix or caramel flavorings.

French Toast Sticks

2 eggs
1/2 c powdered sugar
1/4 c milk
1/4 tsp cinnamon
8 slices of white bread, cut into 4 strips each
3 Tbsp margarine

Beat together eggs, sugar, milk and cinnamon. Dip each bread strip into the mixture, coating completely. In a large skillet, melt 1 Tbsp margarine over medium heat. Cook the bread strips a few at a time for 2-3 minutes per side or until golden, adding more butter as needed.

Applesauce Crunch

2 c applesauce
1 c grape nuts cereal
3 Tbsp brown sugar
3 Tbsp margarine
2/3 c powdered milk (opt)

Put applesauce in bowl. Mix rest of ingredients and put on top of applesauce.  Bake at 350 for 15 min. or heat in microwave on high.

Taco Seasoning

4 teaspoons dried minced onion
3 teaspoons chili powder
1 teaspoon cornstarch
1 teaspoon garlic powder
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/8 teaspoon cayenne pepper
1 teaspoon salt

Store in an airtight container for up to 1 year.

Taco Joes

1 pound hamburger 
1 can (16 oz) baked beans
1 pkg (1 oz) taco seasoning mix
hamburger buns

Brown hamburger.  Add in beans and seasoning. Simmer til hot.  Serve over hamburger buns.

Golden Potato Rounds

1 c rice krispies (opt: cornflakes or other cereal)
1 tsp garlic powder
1 tsp oregano
pinch black pepper
1 tsp onion powder
4 med. potatoes, peeled, sliced 1/2 inch thick
1/4 margarine, melted

In plastic bag, crush rice krispies and add spices.  Melt margarine in medium sized bowl. Dip slices of potatoes in margarine, place in cereal bag, shake to cover.  Place slices in lightly greased 9x13 baking dish. Bake at 350 for 30 minutes or until potatoes are tender.

Spinach Brownies

1 (10 oz) bag frozen spinach
1 c flour
1 tsp salt
1 tsp baking powder
2 eggs
1 c milk
1/4 c butter, melted
1 onion, chopped (opt: sauté onions)
1 (8 oz) package shredded mozzarella cheese

Preheat oven to 375. Lightly grease 9x13. Place spinach in pan with water and heat until boiling. Drain. Mix flour, salt, and baking powder. Stir in eggs, milk, melted butter, spinach, onions and mozzarella. Place in 9x13. Bake 25 min.

Peanut Butter Fudge/Topping



1 c powdered sugar
1 1/2 Tbsp peanut butter
3 Tbsp margarine

Place powdered sugar in microwavable bowl.  Put peanut butter and margarine on top of sugar.  Microwave on high for 20 seconds.  Stir until creamy.  Add more or less margarine to achieve desired thickness of fudge or ice cream topping.

Mexican Wedding Cakes

1 c butter
1/2 c powdered sugar
1 tsp vanilla
2 1/4 c flour
1/4 tsp salt
3/4 c finely chopped nuts

Mix butter, sugar, vanilla thoroughly. Mix flour and salt and add to butter mix. Add nuts. Chill dough.

Roll dough in 1" balls. Place on ungreased baking sheet. Bake at 400 for 8-10 minutes until set but not brown. While warm, roll in powdered sugar. Cool. Roll in sugar again.

Saltine Toffee

1 sleeve saltine crackers
1/3 c butter
1/4 c sugar
1/3 bag chocolate chips

Place butter and sugar in saucepan. Bring to a boil and turn off. Line cookie sheet with parchment paper (or greased foil).  Arrange saltines on the cookie sheet.  Spoon sugar-butter over the saltines.  Bake at 350 for 5 minutes.  Sprinkle chocolate chips over top of saltines.  Allow to soften for 3 minutes then spread chocolate chips across saltines.  Refrigerate for 2-3 hours until set.

Pancakes

1 1/2 c flour
1 tsp salt
3 tsp baking powder
1 Tbsp sugar
1 egg
1 Tbsp oil
1 c milk (check measurements on this...)

optional additions:  chocolate chips, apple cubes, sausage bits


Mix dry ingredients.  Add in wet ingredients and stir.  Cook until light brown.

Apple Crisp

4-5 Apples
1 1/2 c Sugar
1 tsp Cinnamon
2 Flour
3/4 c Margarine

For larger amounts (use equal amounts of sugar & flour and half of that amount of butter)

Peel, core and slice apples. Place in a 9x13 greased baking dish.  Sprinkle sugar and cinnamon on top of apples.
Mix equal parts flour and sugar.  Chop margarine into the flour mixture. Distribute over apples  Bake at 350 for 30 minutes or until lightly browned.

Strawberry Pretzel Salad


2 c crushed pretzels
3/4 c melted butter
3 Tbsp sugar
1 8 oz pkg cream cheese, softened
1 c white sugar
1 8 oz container cool whip, thawed
3 c boiling water
6 oz strawberry jello
frozen sliced strawberries (12 - 20 oz depending on how many strawberries you want on the top)

Mix pretzels, 3Tbsp sugar and butter. Press into bottom of 9x13 dish. Bake 8-10 min at 350. Set aside to cool.
In large bowl, mix together cream cheese and 1 c sugar. Fold in whipped topping. Spread mixture onto cooled crust.  Refrigerate while making jello mixture.

Disolve jello in boiling water. Stir in still frozen strawberries. Allow to set briefly. When jello is the consistency of egg whites, pour over cream cheese layer. Refrigerate until set.

Chocolate Chip Bars

1 c margarine

3/4 white sugar
3/4 c brown sugar (packed)
1 tsp vanilla
2 eggs
2 1/4 c flour
1 tsp baking powder
1 tsp salt
2 c chocolate chips

Preheat oven to 375.  Grease 9x13 cake pan.
Beat margarine, white sugar, brown sugar and vanilla until creamy. Mix in eggs.  Add flour, baking powder and salt.  Mix.  Fold in chocolate chips.  Place dough in greased 9x13.  Bake at 375 for 25 minutes or until golden brown.

No-Bake Cookies

Heat and boil 3 minutes:
1 stick margarine
2 cup sugar
3 Tbsp cocoa
½ cup milk

Remove from heat & add:
½ cup peanut butter
½ tsp vanilla
2½ cups oatmeal

Place spoonfuls directly onto plates or else on a pan covered with foil. Enjoy.

Okra and Tomatoes

2 slices bacon
1 pound frozen okra, thawed and sliced
1 small onion, chopped
1/2 green bell pepper, chopped
2 celery, chopped
1 (14.5 ounce) can stewed tomatoes
salt and pepper to taste

Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. Remove bacon from pan and saute okra, onion, pepper and celery until tender. Add tomatoes, salt and pepper and cook until well blended. Garnish with crumbled bacon.

Almond Cranberry Squash Bake

4 cups hot mashed butternut squash
4 tablespoons butter or margarine, softened, divided
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1/4 teaspoon ground nutmeg
1 (16 ounce) can whole berry cranberry sauce
1/2 cup sliced almonds
1/4 cup packed brown sugar

In a large bowl, combine the squash, 2 tablespoons butter, salt, cinnamon, allspice and nutmeg; mix well. transfer to a greased 2-qt. baking dish. Stir cranberry sauce until softened; spoon over squash.

Combine almonds, brown sugar and remaining butter; mix well. Sprinkle over cranberry sauce. Bake, uncovered, at 350 degrees F for 50-60 minutes or until golden brown and bubbly.

Angel Biscuits

1 pkg. dry yeast
2 T hot water
5 cups flour
1 tsp. soda
3 tsp. baking powder
2 T sugar
1 ½ tsp. Salt
1 cup shortening
2 cups buttermilk *

Dissolve yeast in warm water. Sift dry ingredients into a large bowl. Cut in shortening with pastry blender. Add buttermilk and yeast mix. Stir until thoroughly moistened. Turn dough onto floured board and kneed for 1- 2 minutes. (No rising is required) Roll into biscuit sized pieces. Place on ungreased baking sheets. Bake at 400 degrees for 12 – 15 min. or until lightly browned.

* may use 2 c milk with either 2 Tbsp vinegar or 3 Tbsp italian salad dressing in place of buttermilk

note: mix can be made earlier in the day and kept on counter for an hour or so or placed in the refrigerator overnight.

Molletes

We made these in our Spanish class.  They are common in Mexico.

rolls or biscuits
refried beans
cheddar/taco mix cheese
salsa (optional)

Broil the half biscuit til lightly browned. Spoon refried beans on top of biscuit.  Cover with cheese. Broil until cheese melts.  Serve warm.

Optional:  you may choose to add other toppings such as salsa, lettuce, ham, sausage, etc.

Fried Apples

3 apples
3 tbsp butter/margarine
2 tbsp brown sugar (optional)

Peel and core and slice apples.  Add butter and apples to a frying pan and saute until soft.  Add brown sugar if apples are tart. Serve warm or cold.

Apple Pie



Pie Crust (double crust/lattice top)
2 cups sifted all-purpose flour
1 tsp. salt
2/3 cup shortening
5-7 Tbsp. cold water

Sift flour & salt. Cut in shortening till pieces are size of small peas. Sprinkle water over 1 tbsp. at a time, tossing mixture after each addition. Form into ball; flatten on lightly floured surface. Roll 1/8 inch thick from center to edge.
