Ruth's Frozen Apple Pie

1 unbaked pie crust

Toss together and place in pie crust:
2 Tbsp brown sugar
2 Tbsp flour
1 tsp cinnamon
1/8 tsp nutmeg
1 Tbsp lemon juice
6-8 c thinly sliced and peeled apples

Mix brown sugar, flour & cinnamon then cut in utter until large chunks form:
1 c brown sugar
2/3 c flour
1/2 tsp cinnamon
1/2 c butter

Place mixture over apples and pat down.

Wrap pie and freeze.
Bake at 350 til Ruth says it's done. 25-40 min.

Turkey Apple Cranberry Bake

1 c dry seasoned stuffing
1 Tbsp butter/margarine, melted
1 can (10 3/4 oz) cream of celery soup
1/2 c milk
2 c cubed cooked turkey
1 medium apple, diced (about 1 1/2 c)
1 stalk celery, finely chopped (about 1/2 c)
1/2 c dried cranberries
1/2 c pecan halves, chopped

Mix stuffing and butter in small bowl and set aside.
Mix rest of ingredients and place in 12x8x2 shallow baking dish. Sprinkle reserved stuffing mix on top.  Bake at 400 for 30 minutes or until hot and bubbly.

Banana Muffins

Batter:
1 1/2 c all-purpose flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
3 bananas, mashed
1/4 c brown sugar
1/2 c white sugar
1 egg
1/2 c canola oil

Crumb topping:
1/3 c brown sugar
2 tbsp flour
1/4 tsp cinnamon
1 tbsp butter or margarine


Preheat oven to 375.
Batter: In a large bowl, mix together flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and canola oil. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.

Topping: In a small bowl, mix together brown sugar, flour and cinnamon. Cut in butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.

Bake until a toothpick inserted into center of a muffin comes out clean.
mini-muffin pan - 8-9 minutes
regular size muffin pan -

1 recipe makes 12 regular-sized and 12 mini-sized muffins.

Cherry Pie Cake




1 can cherry pie filling
1 yellow or white cake mix
(Follow other ingredients on cake mix box - eggs/oil/water/etc.)

Prepare cake mix. Pour into 9x13 greased pan. Glob pie filling on top. Bake according to cake mix instructions.

Corn Casserole

1 can creamed corn  
1 can corn, drained
1 package (8 oz) corn muffin mix
1 egg
1/4 c margarine, melted
1 c sour cream
2 Tbsp hot sauce
2 tsp garlic powder
1 tsp onion powder
1 Tbsp dried minced onion
1 1/2 c shredded cheddar cheese

Mix all ingredients together (except cheese) and pour into greased 9x13 baking dish. Bake uncovered for 30 minutes at 350. Sprinkle cheese on top. Bake for 15-25 min. more.

Chicken and Onion Soup Rice


  • 1 c rice (raw)
  • 1 pkg dry onion soup mix
  • margarine
  • chicken pieces
Grease 9x13 baking dish. Sprinkle rice onto baking dish. Pour 2 1/2 c water over the rice. Sprinkle soup mix over rice. Dot with margarine. Arrange chicken pieces over top.  Cover baking dish with foil. Bake at 350 for  1 1/2 hours.

Enchilada Casserole

I'm just going to link to an amazing recipe I found. I made it for the first time with my friends over, and they all gave me the thumbs up and said it was amazing. So here goes:

I'll have to put up a picture sometime... But let me just say, don't skip the avocado on top. It adds an extra layer of goodness (and healthiness) to the dish.

Ingredients needed:
Enchilada sauce,
corn tortillas
1 can of black beans
1 can or similar amount of corn
1 bag shredded cheese
1 avocado
1 1/2 pounds shredded chicken
seasonings: I used oregano, garlic, minced onion and cilantro on top
*sour cream on the side optional. My friends all added sour cream to theirs.

It's quite simple: spread some sauce on the bottom of your baking dish, then a layer of corn tortillas (cut in halves or quarters). Then layer in your chicken, beans, corn, and cheese. Do this 2-3 times, so you have the layer of cheese on top. Cook at 350 for 15-20 minutes, covered. Uncover and let cook for 5 more minutes. Cut the avocado in chunks and spread across the casserole, and you are ready to dish up!
