Spinach Balls

20 oz frozen chopped spinach defrosted, drained
2 cups bread crumbs
1 c parmesan cheese, shredded
1/2 c melted butter
1 onion, chopped
3 eggs
1 c cheddar cheese, shredded
1/2 tsp salt
1/2 tsp black pepper
1 tsp garlic powder

Instructions
Preheat oven to 350°F.
In a large bowl mix together spinach, breadcrumbs, Parmesan, butter, green onions, eggs, cheddar, salt, pepper, and garlic. Form into balls and place on a large greased baking sheet.
Bake for 20-25 minutes, or until spinach balls are golden brown and cooked through.

Tomato Squash Layered Casserole

3 c squash, sliced thin 
1 can diced tomatoes with garlic and oregano
2 tsp garlic powder
1 tsp Italian seasoning
1/2 c shredded Parmesan cheese
1 1/2 c shredded mozzarella
1 c panko Italian bread crumbs
2 Tbsp butter
French fried onion pieces

(Optional: add hamburger or Italian sausage to make a one dish casserole)

Preheat oven to 375. Grease 9 x 13 baking dish. Layer sliced squash in a single layer on the bottom of baking dish. Sprinkle with 1/2 of the mozzarella. Mixed together, Italian seasoning and garlic. Sprinkle half over the cheese. Spread out tomatoes over squash. Cover with another layer of the sliced squash. Place the rest of the cheese on top of the squash. Sprinkle rest of seasoning on top of cheese. Mix together butter and breadcrumbs. Sprinkle on top of dish. Sprinkle French fried onions on top. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 20 minutes. Lets stand for five minutes before cutting.

Eggplant Pizza

Eggplant
Olive oil
Mozzarella cheese
Garlic powder
Oregano
Spaghetti sauce
Sausage or pepperoni 

Preheat oven to 450. Slice eggplant 1/4 inch thick. Lay out slices in single layer on baking sheet. Brush with olive oil. Bake for 15 minutes.  Remove from oven. Spoon on spaghetti sauce on top on slices. Season with garlic and oregano. Layer on cheese and then meat. Bake 5 more minutes or until cheese is melted.

Country Style Ribs

1-2 lbs County Style Ribs
1/2 c Soy Sauce
1-2 Tbsp Mustard
1/3 c Ketchup
2 tsp Garlic Powder

Place ribs in crock pot. Mix sauce ingredients together and pour over ribs. Cook on low for 8 hours.

RICE

Use liquid from crock pot to make rice to serve with meal.

Ruth’s Baked beans (Crockpot version)

1) Soak beans overnight in water. Rinse in the morning.    


2) Saute 1 small yellow onion, diced finely.

3) Place onion in bottom of crockpot. Layer beans on top.

4) Add rest of ingredients, mix, and cook 6-8 hours on high, or 10 on low.

3 cups broth

14 oz white beans

1⁄2 cup, plus 2 tbsp of BBQ sauce

1⁄2 cup ketchup

3 tbsp maple syrup

2 tbsp honey

2 tsp Worcestershire sauce

2 tbsp tomato paste

2 tsp smoked paprika

2 tsp dry mustard

1 tsp cumin

1⁄2 - 1 tsp salt

1⁄2 tsp pepper

2 tsp olive oil for sauteeing onions 1 onion, diced finely

Chicken Tenders

Chicken, boneless-skinless - thighs or breast
Italian style bread crumbs
1 egg
Oil

Heat oil in sauté pan. Put egg in one bowl and stir. Put breadcrumbs in another bowl. Dip chicken in egg then in breadcrumbs. Place in hot oil. Cook until the chicken isn’t spongy.
