1/2 pound rice
1/2 pound cooked beans
1 cup water
1 can coconut milk
1/3 diced small onion
1 small diced green pepper
1/2 tsp salt
1 tsp chicken bouillon (consommé de pollo)
1 culantro leaf chopped finely (or 1/2 tsp cilantro)
1/2 tsp cumin
1 tbsp oil
Sauté pepper and onion in the oil. Add the seasonings. Add rice and water and part of the coconut milk and bring to boil. After boiling, add the rest of the coconut milk, along with the beans. Cook on medium low, covered till the liquid has evaporated and rice is soft.
