1 1/2 lbs. ground beef
1/4 c. water
1 package taco seasoning (or 1.25 oz. homemade mix)
1 cup plain yogurt
1 (10.75 oz) cream of chicken condensed soup
2 c. shredded mozzarella cheese
6 tortilla shells
optional:
1 diced jalapeƱo, to taste
Variations:
Switch the mozzarella for cheddar cheese. I also used only about 1 cup of cheese, and that was plenty.
Instructions:
- Cook the meat on medium heat until browned. Add water and taco seasoning. Simmer till all or most of water has evaporated.
- Mix yogurt, condensed soup, and cheese in a separate bowl.
- Divide meat evenly between tortillas. Add a couple spoonfuls of the cheese/soup mixture on top of the meat, then roll up the tortilla. Place in baking dish (7x11 or similar size).
- Spread the rest of the cheese/soup mixture on top of the tortillas in the pan.
- Bake at 350 for 20-30 minutes.
